What You Need
- Potatoes: Make sure that you choose fresh potatoes that are free from any discoloration or molds. Russet potatoes are popularly used for French fries. The number of potatoes needed for the recipe would depend on how many fries you want. Four big potatoes will make fries enough for four to five people.
- Crinkle cutter or mandoline: A Mandoline is a vegetable slicer you can use for different kinds of cuts. It has a set of blades to choose from. For waffle fries, we will be using the fluted cutting blade for making its wavy grooves. You can also use a crinkle cutter, a knife that forms a shape of wavy grooves as well.
- Peeler: Using a peeler is optional, depending on if you want fries with or without the skin.
How to proceed
- Wash Your Potatoes: Before anything else, clean your potatoes and rinse them under cool and running water. Scrub off the dirt using a vegetable brush.Clean it carefully if you will keep the potato skin on your fries. The skin may have excess dirt, so make sure the potato skin is free from any bacteria or residue.If you plan on having the fries WITHOUT skin, then peel the skin off before rinsing it. No need to brush the peeled potato anymore.
- Slice the Potatoes: Ready the crinkle cutter or Mandoline. If you have a Mandoline with adjustable thickness, choke one that is around 6mm.Slice the potatoes carefully and pass the end until you make one ridged slice. Continue until all your potatoes are sliced.Now, it’s time to fry the potatoes.

- Pot or saucepan for deep frying
- Plate for serving
- Paper towel: This is used to remove the excess oil after deep frying the waffle fries.
- Seasoning: You can use any seasoning for the fries, depending on your taste buds. I recommend adding Cajun seasoning or flavored powder (cheese is my favorite!). Of course, salt is an essential. Make sure only to add a pinch or a few teaspoons to avoid overpowering the flavors.
How to proceed
- Heat Oil: Pour about four inches of oil into your pan and make the oil reach 180 degrees Celsius or 350 degrees Fahrenheit. Check the temperature by using a kitchen thermometer. If not, you can splash droplets of water into the oil. If it sizzles, it’s hot enough for frying.
- Fry the Potatoes: Add the potatoes into the hot oil and fry it for a few minutes, turning it when needed. Take the fires out once they are in a golden brown color.
- Drain Oil: Remove the excess oil by putting the cooked fries onto a plate with paper towels. Continue cooking the potatoes and draining the fries from oil until everything’s done.
- Season and Serve: Add some of your favorite seasonings, pair it with sauce, and serve it while it’s hot!It will take about ten minutes to prepare the ingredients (cutting the potatoes) and less than half an hour to fry it, depending on how many potatoes you plan to fry.
